Essential oils, herbs, or herbal drugs:
1. Leaf, 2. Flower, 3. Fruit, 4. Bark, 5. Root. obtained by various methods. Essential oils are usually liquid, rarely semi-solid at room temperature, volatile at room temperature, and usually have a strong odour.

Essential oils are compounds that can be entrained with water vapor, are insoluble in water, are lighter or rarely heavier than water, and contain substances of different terpenic nature.

"Water Vapor Distillation Method" is widely used in the production of essential oils. In this method, the material carrying essential oil is placed in a distillation vessel with water and heated. The water vapor formed from the boiling water drags the essential oil, this mixture is passed through a cooler, the essential oil is separated from the water and collected in special collection containers. While obtaining essential oil, "Aromatic Waters" are obtained as a by-product. Aromatic water is the watery part below the essential oil in the collecting container. Generally, it carries some water-soluble substances found in essential oil and has a distinctive smell (such as rose water, thyme water).
The essential oils found in the peels of citrus fruits are obtained by the "squeezing method". The usage and consumption areas of essential oils and drugs carrying essential oil are very wide. The areas of use in the food industry and many other industrial branches constitute a very important place.
