Royal jelly is a substance secreted from the suprapharyngeal glands of 5-15 days old worker bees. In-gel form, it has a flowing consistency, creamy-white in color. Its taste is sour and its smell is a sharp phenolic structure. Its density is 1.1 g/cm³ and it is partially soluble in water. Although it is not related to the milk formed in the udder of mammals, it is called milk in Turkish and royal jelly in other languages due to its use in feeding young and its milk-like appearance.
Royal jelly is the food of the queen bee and its nutritional value is quite high. Although the queen and worker bees have the same genetic structure when they hatch, feeding them with royal jelly at different rates and times during the larval stage causes their structures to differ. As a result of this different diet for only 6 days, the queen gains resistance to diseases, can produce eggs twice its own weight (1500-3000) per day, and live for 6 years. Other worker bees, on the other hand, get sick easily, and cannot lay eggs even though they are female and live only 2 months. This degree of differentiation between the two individuals is due to the fact that they are fed only with royal jelly.
Bee milk; It contains approximately 66% water, 14.5% carbohydrates, 4.5% lipids, 13% amino acids, all B group vitamins, vitamins A, D, C, and E, biologically active substances, some important mineral substances, and some undetectable substances. It also contains eight of the 10 essential amino acids (methionine, leucine, lysine, valine, phenyl-alanine, threonine, tryptophan, isoleucine) with natural hormones and enzymes. Panic acid (pantheistic acid), acetylcholine (acetylcholine), protein, which is very important for metabolism, 10-HDA (10-Hydroxy-2 Decanoic Acid), a fatty acid that strengthens the immune system, sepanin acid (sepanine acid), after the recovery period of diseases. It contains oleic acid (oleic acid), which is ideal for regulating digestion and opening the appetite.
